Post Are spices worth the expense-spun1
Are spices worth the expense
The initial step in learning how you can cook with spices is learning how to locate spices. Now here in America,[link widoczny dla zalogowanych], we do have some indigenous spices: allspice,[link widoczny dla zalogowanych], vanilla, chili peppers, all from here. But generally,[link widoczny dla zalogowanych], much of your culinary spices range from other part of the planet. As well as in their journey after that to here,[link widoczny dla zalogowanych], a lot of things can happen. Not all of them good. They pass through a lot of hands, and all sorts of those palms, you realize, want to be greased a bit, quality can go down. So, if you're going to be a world-class spice cooker, you should try to find yourself a world-class spice merchant. … I sure hope we've inspired you to setup just a little spice trade of your. Keep in mind: purchase whole spices,[link widoczny dla zalogowanych], whenever feasible, from the reliable purveyor-Internet or catalog shopping are fine-and store those spices inside a cool, dry,[link widoczny dla zalogowanych], dark,[link widoczny dla zalogowanych], airtight place. And do not have them around too long. Two years tops for whole spices, and no a lot more than 6 months for ground.
So,[link widoczny dla zalogowanych], in summary, the most important thing about buying spices is ensuring they are fresh and have been stored properly during their transport. Which means buying from the purveyor whom you trust has properly sourced and handled the spices. Should you visit a specialty spice merchant, chances are they care enough to ensure the quality of the product, and they ask you for more for that ease of that guarantee. If you shop at an ethnic market that buys imports its spices in large quantities,[link widoczny dla zalogowanych], that's okay, so long as the store has enough turnover to ensure that the spices are always fresh, however, you do not necessarily have the guarantee of freshness unless you trust the store owner. Supermarket spices could be okay, so long as they are stored and dated properly. These generally are more expensive less because of the willingness of buyers to pay for more, but more because of the fact that there's a longer chain of wholesalers and middle men who all also want to make a profit.
In my opinion, the specialty Asian stores (in the UK),[link widoczny dla zalogowanych], or even the spice shops and market stalls in other areas around the globe usually have better tasting (and more "authentic", in the event that means anything) spices than supermarkets.
Markup is generally due to such things as convenience, brand (use Ferarri since it is expensive) and packaging, instead of actual costs.
+1, "Everything may be worth what its purchaser will pay for it." (Publilius Syrus); frequently, the main difference between one thing and the other is packaging and marketing. I recently found a well-packaged version of essentially "cream of wheat", marked up at 4x the cost-per-oz. the packaging claimed you can "see the standard.". If you see more marketing claims than real information about the product,[link widoczny dla zalogowanych], this ought to be throwing flags in your thoughts that you may be repaying too much. Temporarily selling some products lower than the cost of production can encourage more and more people to come to your store and buy things. And here in the US, almost all corn, wheat, and soy products are subsidized by the government to allow them to be sold below the price of production. are still owned by big corporations. One such example may be the Mexican spice label brand "Mojave" owned by McCormick. The Mojave brand distributes bulk containers at the 1qt volume for a lot of spices in the same price as well as less than some fl. oz. volume size of a McCormick "premium" branded spice. It should be a crime, imho. Many other similar subsidiaries and branding gimmicks exist. There are claims of improved qc and raw meal source differences, but mostly retail prices are aimed up to customers will pay. zanlok Jun 28 '11 at 9:01
Living in China,[link widoczny dla zalogowanych], the same brands of spices as I did back home. Also they come in exactly the same bottles or jars. I can also discover the same brand in small packets. The price difference can be ten or twenty times just result in purchase a jar rather than a packet. They have to function as the same task inside.
There are two factors that I think really make a difference to some spice,[link widoczny dla zalogowanych]. The fist is it's freshness. How long and just how carefully has it been transported and stored and how far it has travelled,[link widoczny dla zalogowanych]. Should you grow your own herbs then you will know that this makes an impact.
The 2nd factor is whither the spice is ground or whole. When a spice is ground,[link widoczny dla zalogowanych], it looses it's favours a lot more rapidly. If you want the very best flavours, buy your spices as whole pods and grind the thing you need as you go. I've found that many spice can be popped right into a pepper grinder or ground in a pestle whenever you need them. In China, they really on a regular spice whole or just cracked instead of ground.
Another aspect to quality that is difficult to measure and that is the authenticity of the spice itself. Take saffron threads for instance. The yellow threads don't have the coveted flavor of saffron that the red threads deliver. Ideas enter the gray section of preference but paying less for saffron cut with a lot of yellow threads will modify the taste of the dish. With cinnamon you will find price differences between Ceylon (true) cinnamon and cassia. Vanilla is another complex spice where price usually reflects quality. you may also be paying for convenience. For example, whenever you purchase pumpkin pie spice off the shelf the spices are pre-ground and pre-mixed. Within the short-term that little jar might seem less expensive than purchasing the individual spices. They each smelled like a disgusting mixture of feet and paint - plus they didn't smell just like they were designed to. I also got a 200g package of ginger from their store. The powdered ginger didn't smell bad whatsoever (it smelled like ginger).
The colour of those spices was good but the bag was sealed. I'm not putting it past them to have put some kind of dye inside, also it's possible they used a small amount of a toxic dye (all 3 packages really did smell weakly of paint).
Obviously, I threw them away immediately (it was past too far to return them - I had bought them several weeks earlier and do not have the receipt). So there's $12 for crummy spices I did not even enjoy.
